In this investigation I had to weigh the flour 100grams each of strong breads flour , self raising flour , whole meal flour and
plain flour I kneaded the flour to make a soft dough I added some warm water to knead it. Then I wrapped inside a j cloth and washed with cold water for a long time. In this investigation I have learned that while washing the dough the starch goes of and left with gluten. I think the best flour to make bread is strong flour because it has the most gluten in it compare to the other flours. After washing the dough when the starch properly goes of I weigh all the dough again the results are. Plain flour weigh 40 grams , self raising flour weigh 50g , strong flour weigh 60g and whole meal weigh only 30 g
Whole meal flour is also good for bread making but it has fibre in it which absorbs water .
